I just read some surprising – no scary – information in Dr. Nicholas Perricones’ new book, Dr. Perricone's 7 Secrets to Beauty, Health, and Longevity: The Miracle of Cellular Rejuvenation.
Dr. Perricone links today’s obesity epidemic to high-fructose corn syrup (HFCS) which was introduced in the 1970s. Today you find it everywhere. It represents 40% of the caloric sweeteners added to foods and beverages.
Now here’s the scary part.
1. According to the Alternative Medicine Review (December 2005), “fructose promotes the formation of advanced glycation end-products.” Glycation is the process by which glucose links with proteins and causes them to bind together, thus stiffening tissues and leading to the complications of diabetes and some of the physiologic problems associated with aging.
Glycation affects the skin's support system—collagen, elastin and other proteins—and leads to wrinkles, sagging, loss of youthful contours and uneven skin tone.
All simple sugars, including HFCS, cause a pro-inflammatory spike in blood sugar. But unlike glucose, HFCS does not stimulate the release of insulin. Insulin plays a critical role in metabolizing sugar. Poorly-metabolized sugar does more glycation damage.
