Cyndi shares a great Marinade Recipe for the next time you want to throw another shrimp on the barbie. I bet it would be delicious with other seafood or chicken as well. [This reminds me of the cutest greeting card. On the front is a picture of a prone Barbie doll with a huge shrimp on top of her. Inside it says. “Let's throw another …” LOL!]
Here's a real easy meal from Jean which even the kids will love: Easy Chicken Enchiladas with Avocado/Corn Salsa. The enchiladas can be prepared ahead and frozen. They only require 10 minutes in the oven or can be heated in the microwave for a non-crispy version.
Sandy gives us a Meatless Pasta Puttanesca, made with olives, tomatoes, peppers and anchovies. Don’t be scared away by the anchovies. They provide protein and saltiness; but the fishy flavor is masked by all the other wonderful ingredients.
